Soft Choc Chip Cookie

If you're a crispy cookie fan this one's not for you

1 x tub Cream Cheese
1/4 cup unsalted butter
1 cup Swerve (I used xylitol)
3 eggs
1 tsp vanilla extract
2 tbsp coconut flour
2/3 cup hazelnut meal (almond meal also works, but has more carbs!) – (I used almond flour)
1/4 tsp kosher salt
1/4 tsp xanthan gum
1/2 tsp baking powder
1.5 cups chopped ChocoPerfection Dark Bars (I chopped up some dark lindt)

Preheat over to 180° (or 160° in a fan oven). Cream together cream cheese, butter and sweetener – I used a hand held mixer. Add eggs one at a time scrapping sides down. Add remaining ingredients except choc chips. Once it’s mixed well fold in choc chips. Spoon dough onto baking sheet (I use a rubber sheet because the wax paper I use is the cheap kind and I’m scared it will catch alight in the oven :)). Bake about 25 mins until edges are brown.
