On a quest for the best gluten free roll recipe

Breakfast Buns

(original recipe calls this the Keto Breakfast Bun) Ingredients:

  • 3 Egg Whites (room temperature)
  • 1 Egg
  • 1/4 Cup Boiling Water
  • 1/4 Almond Flour
  • 1/4 Coconut Flour
  • 1 tbs Psyllium Husk Powder
  • 1 tsp Baking Powder

Preheat over to 180° (160° fan oven). Mix dry ingredients. Place all ingredients into a food processor and blend for 20 seconds. Let the dough sit for a bit as the flours absorb (at this point I washed the food processor to prepare for the oatmeal cookies).

Separate into 4 and roll into bun balls with your hands and place on a baking sheet – I use a silicone mat. Sprinkle with sesame seeds and cut 4 slits on top (like a hot cross bun). Bake for 25 mins or until brown.

Dinner Rolls

Ingredients:

  • 1 cup tapioca flour (starch) (I found mine at Whole Foods)
  • 1/4 – 1/3 cup coconut flour
  • 1 teaspoon sea salt
  • 1/2 cup warm water
  • 1/2 cup olive oil
  • 1 large egg, whisked

Preheat over to 180° (160° fan oven). Combine the tapioca flour, salt and the coconut flour in a small bowl. In a medium bowl, whisk the egg, and then pour in the oil and warm water.

Add dry ingredients to wet (slowly). If the mixture is too thin add more coconut flour but wait until it absorbs before adding more. A mistake I made was adding more tapioca and the middle didn’t really cook through but the outside was still good (I cut in half and baked some more).

Scoop into balls – use some tapioca flour in your hands, it helps with the sticking. Place on a baking sheet or silicone mat and bake for 30 – 35 min.

Easy Low Carb Rolls

Ingredients:

  • 1/2 cup Coconut flour
  • 2 tbsp psyllium husk powder
  • 1/2 tsp Baking powder
  • 1/4 tsp Pink Salt
  • 3/4 cup Water
  • 4 large eggs
  • 4 tbsp Butter

Preheat over to 180° (160° fan oven). Mix dry ingredients with a whisk and in a separate bowl mix the wet ingredients.

Pour dry ingredients into wet ingredients and mix until a dough forms.

Add more psyllium husk if the dough doesn’t shape easily. Shape in rolls and place on a silicone mat. Bake for 30 – 35 min.
