Easy MuffinThe quickest health snack to make
This is one of the easiest healthy go-to’s. Especially great when I want to get back into eating healthier again and satisfying the sweet tooth – also, it’s like “cake”, a bit misleading but it helps.
My addition is adding 70% – 80% Lindt (I’m at my healthiest when I go to 90%), chopped and sprinkled on top. Other toppings: cinnamon, desiccated coconut, cranberries (although not that low kal but in comparison to eating a chocolate bar, I’d say, not such a bad thing :))
2 Bananas, medium sized
2 Eggs, large
2 tbsp Honey, raw (I substituted with Xylitol or Agave Syrup)
1 cup Nut butter – you can buy nut butters here (I make my own nut butter usually or use the no salt/sugar peanut butter)
1/2 tsp Baking Soda
1 tsp Vanilla
1 tsp Apple cider vinegar
Preheat oven to 200° (If you have a fan like I do, then it will be 180°). Mix all the ingredients in a food processor – I know, how easy is that! Pour batter into greased muffin pan. Add toppings and bake for 15 mins.
